Marinated Mushrooms with HerbsMakes 4-6 Servings
Serve these as an appetizer and watch them disappear!
1 lb mushrooms
1/2 cup olive oil
2 tbsp lemon juice
2 tbsp white vinegar
1 tsp salt
1/2 tsp pepper
1 tsp dried oregano, crumbled
1/4 tsp dried thyme, crumbled
1/4 tsp dried basil, crumbled
1 garlic clove, minced
- Clean mushrooms and put them into a saucepan.
- Combine remaining ingredients and pour over mushrooms. Simmer over low heat for 8 minutes. Remove from heat and cool. Refrigerate in covered container overnight.
- Serve at room temperature on their own, as an appetizer or as part of an antipasto platter.
